Autoimmune diseases each exhibit very different symptoms that make them appear to be completely unrelated. However, they all have one commonality. They are all autoimmune disorders in which the body's immune system has been accidentally triggered to attack a specific protein tissue of your own body. The original cause is most likely Leaky Gut Syndrome. What is Rheumatoid Arthritis?
"Rheumatoid arthritis is an inflammatory disease that causes pain, swelling, stiffness, and loss of function in the joints. It has several special features that make it different from other kinds of arthritis. What is Multiple Sclerosis?
"An unpredictable disease of the central nervous system, multiple sclerosis (MS) can range from relatively benign to somewhat disabling to devastating, as communication between the brain and other parts of the body is disrupted. Many investigators believe MS to be an autoimmune disease -- one in which the body, through its immune system, launches a defensive attack against its own tissues. In the case of MS, it is the nerve-insulating myelin that comes under assault. Such assaults may be linked to an unknown environmental trigger, perhaps a virus."
"Most people experience their first symptoms of MS between the ages of 20 and 40; the initial symptom of MS is often blurred or double vision, red-green color distortion, or even blindness in one eye. Most MS patients experience muscle weakness in their extremities and difficulty with coordination and balance. These symptoms may be severe enough to impair walking or even standing. In the worst cases, MS can produce partial or complete paralysis. Is there any treatment?
"There is as yet no cure for MS. Many patients do well with no therapy at all, especially since many medications have serious side effects and some carry significant risks. In the past, the principal medications used to treat MS were steroids including adrenocorticotropic hormone (better known as ACTH), prednisone, prednisolone, methylprednisolone, betamethasone, and dexamethasone. While steroids do not affect the course of MS over time, they can reduce the duration and severity of attacks in some patients. Spasticity, which can occur either as a sustained stiffness caused by increased muscle tone or as spasms that come and go, is usually treated with muscle relaxants and tranquilizers such as baclofen, tizanidine, diazepam, clonazepam, and dantrolene. Physical therapy and exercise can help preserve remaining function, and patients may find that various aids -- such as foot braces, canes, and walkers -- can help them remain independent and mobile. If psychological symptoms of fatigue such as depression or apathy are evident, antidepressant medications may help."
A deficiency of cholesterol in the body and diet has been found to cause malformation of the myelin sheath of the nerves, central nervous system and brain. This could be a contributing factor in the cause for the autoimmune disease of the myelin sheath, multiple sclerosis.

What does the average doctor say?
The average doctor will tell you that arthritis, multiple sclerosis, lupus, asthma and other related autoimmune diseases have no known cause and cannot be healed. Many physicians will say your past diet did not cause your autoimmune disease, and a change in your diet does not help in the treatment. They may recommend a high-fiber diet which actually makes autoimmune diseases worse. High-fiber foods are also high-carbohydrate foods. Humans do not have the enzyme needed to digest fiber, but the bad pathogenic (disease causing) bacteria in the colon certainly do. Fiber will make your autoimmune disease worse, guaranteed. On the other hand, good intestinal bacteria thrive on dietary saturated and monounsaturated fats like those found in red meat. A candida albicans yeast or fungus infection in the small intestine and/or the colon occurs frequently in people with inflammatory bowel diseases. Almost all the digestion and absorption of nutrients occur in the small intestine. Its long length alone provides a large surface area for digestion and absorption, and that area is further increased by mucosa villi on the surface of the interior intestinal wall. The mucosa (inside surface) and the submucosa allows the small intestine to complete the process of digestion and absorption. The mucosa forms a series of villi or small projections only 0.5 to 1.0 mm high and gives the intestinal mucosa a velvety appearance. The villi are the primary structure responsible for the digestion and absorption of food. These villi become damaged from a diet of excessive carbohydrates and the deficiency in proteins and fats. A protein deficiency may be the key because the villi have a short life and are continually being replaced. This replacement may be prevented when one or more of the essential amino acids are missing from the diet. Digestion of the carbohydrates in the small intestine can then become incomplete, and undigested carbohydrates pass to the colon or large intestine where they do not belong. This presence of carbohydrates in the colon encourages the growth of pathogenic bacteria (disease causing) and pathogenic fungi which are opportunistic. Therefore, these pathogenic bacteria in the colon are commonly found in most bowel diseases. The pathogenic bacteria produce toxins which further irritate the digestive system and cause symptomatic reactions by the body. The healthy gut bacteria can become overpowered and destroyed by the bad bacteria and/or candida yeast infections. Treatment of the bacteria by drugs is only a temporary solution because the opportunity exists for their reestablishment. Proper diet together with the reestablishment of a good bacterial flora is essential. The bacteria must be starved to death by removing their primary food source, dietary carbohydrates and fiber, from the diet. Removal of these undesirable bacteria by drug treatment will not be successful if carbohydrates are continued to be consumed. Foods to be eaten are all meats, fish, fowl and seafood with their natural fats and some cooked vegetables. Avoid all prepared meats such as hamburger, ham, sausage, hot dogs, etc., because they can contain hidden carbohydrates in the form of sugars and starches. Meat labeled 100% ground beef may be OK. Low-Carb Initial Symptoms
Going from a standard high-carb diet to the low-carb diet can initially cause several negative symptoms depending on other health problems. Typical temporary symptoms are:
Slight headache. Simply ignore it.
Ketosis is not harmful at all but it does cause a funny taste in the mouth. This will only last for a few weeks at most.
Slight constipation or sluggish bowel. This improves to normal in a few weeks. Digestion on low-carb is perfect with very little gas. Skipping days with no bowel movement is normal and expected.
Leg muscle weakness at the beginning of a hike. Simply keep going. The strength will return in a few minutes, and the legs will be stronger than ever as you continue on the hike.
Carbohydrates are HIGHLY addictive. People don't believe this until they try not eating them. This is the main reason people give up on low-carb, especially those prone to addictive behaviors and weak self control. They make up all kinds of excuses for quitting low-carb, but the truth is they couldn't overcome their addiction to carbohydrates. Addiction to high sugar fruit is a serious problem among adults and children. A study of the shopping carts of adults and the eating habits of children easily proves this unhealthy addiction in all age groups is real. They would rather be sick than give up the addiction.
Starting Diet
Full Nutrition. This is a high-protein, very high-fat diet. This "Starting Diet" helps all autoimmune diseases, arthritis, multiple sclerosis, lupus, diabetes, heart disease, fibromyalgia, chronic fatigue syndrome, Polycystic Ovarian Syndrome (PCOS), osteoporosis and cancer. The diet has an abundance of all of the nutritional essentials and eliminates all the offending foods such as sugar, fructose, grains, fiber, starches, other carbohydrates, trans fats, and omega-6 vegetable, nut and seed oils. Remember, eating only one of the offending foods will cause severe symptoms as if the diet were doing no good at all. Therefore, it is extremely important that the diet program be followed to the letter. The extra vitamins, minerals and supplements are very important as a surcharge of essential nutrients. This helps to overcome deficiency in vitamin and mineral absorption that is common in IBS and IBD due to intestinal damage. Follow the vitamin, mineral and supplement program list on the following link. Adding colloidal trace minerals to the list of other minerals is extremely important. Symptoms of vitamin K deficiency include easy bruisability, epistaxis, gastrointestinal bleeding, menorrhagia and hematuria. DHEA prevents the formation of autoimmune antibodies.
My personal vitamin, mineral and supplement program by Kent R. Rieske.Restrictions. This is a very low-carbohydrate, low-fiber diet. All high-carbohydrate and high-fiber foods are forbidden. The diet for the first six weeks should be highly restricted in order to bring the digestive system under control, reduce inflammation, control constipation or diarrhea, reduce yeast overgrowth, control blood sugar and begin healing the intestinal mucosa. The "die-off" of yeast can cause symptoms to worsen over the initial short term. Supplement with probiotics as described below in all cases to restore the beneficial gut bacteria. Supplement with enzymes. Only after symptoms have been reduced should foods from the acceptable list below be added one at a time to test for sensitivity. Test a new food for at least two weeks before adding a second. All of the food must be fresh and unprepared before cooking.
Meat and Animal Fats. The primary factor in healing intestinal diseases is eating meat and animal fats every meal. This cannot be overly emphasized. The complete compliment of amino acids and essential fatty acids are the primary nutrition elements from which the body builds tissue and the immune system. These can only be found in meat and animal fats. Meat and animal fats also contain vast amounts of vitamins, minerals and other nutritional elements. This diet cannot be adapted to the vegetarian lifestyle. There are no combinations of food from vegetable sources that can provide the complete nutritional requirements necessary for healing. Most vegetable sources contain offending carbohydrates, fiber and allergic factors that are the causes of intestinal diseases, not the cure.
Fish. Eat salmon at least once a week if well tolerated. Cook by boiling, poaching, baking or frying in refined coconut oil. Some people report problems with salmon which can contains rancid omega-3 fatty acids. Avoid salmon with a strong fishy smell. Canned salmon with the bones is very good as long as additives are not present. Eat the bones in canned salmon as well. Do not eat salmon packed in soybean oil.
Fowl. Eat roasted chicken thighs with the skin and eat the skin. Avoid lean breast meat. Fowl injected with a salt, sugar solution is absolutely forbidden.
Red Meat. Eat beef, lamb or pork grilled, roasted, or fried. Select fatty cuts and eat all the fat. Cooking meat to medium rare is best because the enzymes are preserved. Ground meat and pork should be cooked throughout. Fry calf or chicken liver in refined coconut oil and include a small piece with other foods each day. Avoid over-cooking liver. Bacon can be tested after healing has progressed, but the bacon must be totally free from sugars. One cannot be sensitive to salt. The ingredient list on the bacon package must not contain sugar of any type. Avoid all other prepared meats, injected chickens and turkeys and all seasonings. Fried pork skins are an acceptable snack food and can be used with eggs to "bread" other meats and vegetables. Avoid label listing "natural flavors." These additives could contain sugar and MSG, a nerve toxin that makes cancers incurable.
Eggs. Eggs must be tested to see if you have a food allergy, which is possible. If no allergy exists, eat eggs cooked any way desired. Frying in refined coconut oil is best. Soft boiled is very good because the boiling kills any salmonella bacteria which may be present on the outside, and boiling prevents oxidization of the healthy cholesterol in the yolk. Do not limit the quantity.
Science Proves Eggs Do Not Increase Heart Disease Risk.Vegetables. Click on the name to see a picture. Eat well done boiled or steamed asparagus, eggplant, green or yellow string beans, red tomatoes, spinach, celery, peppers or green or yellow zucchini squash only. Red, gold and yellow peppers may be better than the standard green peppers. These must be well cooked. They are good in a stir fry with refined coconut oil. Make a nice lunch or dinner by adding cubed precooked meat or leftover meat to stir fried vegetables. Some cabbage is OK if well cooked. Try pressure cooking cabbage with green beans. Avoid the cabbage if it produces gas. Ripe avocados are acceptable with caution. Raw vegetables are not tolerated by the digestive system because of the fiber. Cooking reduces the fiber content. Do not drink raw vegetable juices. Canned 100% tomato juice is acceptable in moderation. Vegetables are of a minor importance and those listed here should also be viewed with suspicion. Avoid any vegetable that gives an adverse reaction such as cramps, pains or intestinal gas. Avoid all seasonings. Avoid large servings of vegetables. This diet is primarily meat, fish and fowl with the natural fats.
Cheese. Hard cheeses are acceptable for those without a candida yeast infection. Eat only hard cheeses which list no more than 1g of carbohydrates on the nutritional label. Low-salt Swiss cheese is a very good choice that can be eaten without limit. Avoid eating high-sodium cheese with sodium content above 200mg per serving, especially for those with hypertension, high blood pressure. The book, Cheese Primer by Steven Jenkins, is the best reference for a good education about cheeses. Avoid low-fat, low-cholesterol cheese, but part-skim milk cheese is acceptable. Do not eat cream cheese, cottage cheese, soft cheese spreads, dry curd cottage cheese (DCCC) or Farmer's cheese. Some good cheeses are made from sheep's milk and goat's milk, but goat's milk cheese offers nothing special or better than cow's milk cheese. Blue-veined mold cheeses may promote candida more than other types and should be limited. Do not drink or cook with kefir milk which is a fermented liquid product made with active yeasts and bacteria from grains and goat or sheep milk. Do not eat kefir yogurt.
Appetizers. These must be limited to the food restrictions listed here. Acceptable examples are baked chicken wings, boiled or baked shrimp, or raw or cooked oysters. No seasonings are allowed.
Desserts and Snacks. There are no desserts in the common sense of the word in this diet program. The limited acceptable foods for snacking are pine nuts, macadamia nuts, fried pork skins, hard cheeses or one of the appetizer foods. Common high-sugar desserts are one of the primary causes for IBD. Most IBD sufferers will blindly follow any diet that allows desserts such as yogurt, fruit and honey that are forbidden on this diet program. Yogurt, fruit and honey prevent healing and cause repeated flare-ups. Most people refuse to admit they are carbohydrate addicts and continue to suffer for this simple reason. Special homemade dips can be avocado, salsa or mayonnaise. Commercial products are forbidden.
Recipes. Do not cook using recipes. Throw your recipe books away. Do not make soups or use thickeners of any kind. Cook chicken by baking without any additives, frying in butter or coconut oil, or grilling without any additives. Boiled chicken is OK, but it does not taste as good. Butter and coconut oil must not have any sugar added. Do not use spices. Cook fish the same as chicken except boiled salmon is very good. Cook red meat the same way as chicken. A slow cooker or Crockpot is great for all meats. Beef 7-bone roast is wonderful in the Crockpot. Beef, lamb or pork shoulder roasts are great. Add some diced tomatoes and let it cook for at least 5 hours. Serve with a small bowl of the fat drippings as a dip for the meat as you eat. Drinking the fat dripping is very good. Never eat lean meat without added fat. The pressure cooker is best for vegetables because the higher temperature breaks down the fiber. Boiling is OK if continued until the vegetable is soft or well done. During a flare eat only green beans until your digestion improves. Then add other vegetables one at a time to test. Do NOT eat a vegetable only meal. Eat mostly meat, fish or chicken with lots of fat. Eat small portions of vegetables.
Artificial Sweetener. The best sweetener is Necta Sweet that contains sodium bicarbonate and sodium saccharin. It comes in a small bottle with red and white label and a red cap. Clear liquid Stevia Glycerite without FOS is acceptable. Splenda (sucralose) is acceptable but not encouraged. Use all artificial sweeteners sparingly.
MCT Oil. Medium Chain Triglycerides (MCTs) are special oils for those who are unable or have difficulty digesting or absorbing conventional fats. MCT consists of very stable C8 caprylic and C10 capric saturated fatty acids extracted from coconut oil. MCTs are more readily hydrolyzed and absorbed than conventional food fat. MCTs require less enzymes and bile acids for digestion. MCT oil is intended for those with a defect in the intraluminal hydrolysis of fat (decreased pancreatic lipase, decreased bile salts), a defective mucosal fat absorption (decreased mucosal permeability, decreased absorptive surface), or a defective lymphatic transport of fat (ie, intestinal lymphatic obstruction). These defects are common in people with IBD. MCT oil can be used for low temperature cooking or adding to foods in place of other oils. MCT oil gives quick energy, does not increase body fat and does not increase serum cholesterol levels. MCT oil metabolizes without bile; and therefore, gives the gallbladder a rest.
The Health Benefits of Medium Chain Fatty Triglycerides.
MCT Oil, Functional Gourmet, Life Enhancement.Coconut and Coconut Oil. Eat unsweetened flaked or shredded coconut as a snack, and cook with refined coconut oil. Super Wal-Mart stores have a low-price, refined coconut oil that is very good. The flavor of unrefined coconut oil is much to strong. Eat and cook with refined or virgin coconut oil, and eat unsweetened, shredded coconut. Try both together at the same time for a taste treat. Do not eat processed coconut flour because it is the concentrated bad portion of coconut consisting of fiber and carbohydrates.
Fats and Dips. All natural animal fats are highly recommended and should be eaten. Butter is very good and extra light olive oil is acceptable. Saturated fat is healthy and necessary to build healthy body cells. Avoid unhealthy polyunsaturated vegetable, seed and grain oils made from corn, soybean, canola, safflower, sunflower, cottonseed, almond, apricot, grapeseed, peanut, poppyseed, rice bran, sesame, teaseed, tomato seed, walnut, and wheat germ because they are very high in inflammatory omega-6 fatty acids as described below. Make homemade mayonnaise as a dip for meat, fish, chicken or steamed vegetables. Place one tablespoon of lemon juice and one raw egg in a blender. R. O. Water. Drink generous amounts of room temperature or warmer reverse osmosis with UV lamp (R.O.) water throughout the day. Do not drink ice water. Do not drink "natural spring mineral" water because the mineral content can be very unbalanced. The mineral program in this diet will restore all necessary minerals to the body in the correct ratios. Peppermint tea and peppermint aromatic oils (carminatives) can relax smooth muscle and relieve pain caused by cramps in some people. Enteric-coated peppermint oil capsules are also recommended. Hot chamomile tea without any sweetener after a meal is very settling to the stomach.
Candida Restriction, Drugs and Herbs. This "Starting Diet" is already an anti-candida diet. Do not violate the food restrictions for any reasons whether you have candida or not. Those with a Candidiasis infection should always avoid fermented foods such as soy sauce, cheese, beer, alcohol, vinegar, sauerkraut and pickles as well as mushrooms and sugar alcohols. Nasal and Sinus Treatment. Chronic congestion of sinuses and nasal passages can be a bacteria infection that should be treated with antibiotics, but this is generally a misdiagnosis. The symptoms may be from a yeast or fungus infection that causes itching and excess mucus. The fungus is attracted to the moist environment. Treatment is easy because fungi are quickly killed by sodium bicarbonate (common baking soda). A home remedy is more effective than commercial products. Simply obtain a 1 oz. plastic nasal rinse or squirt bottle. Mix 1/4 teaspoon of sodium bicarbonate with reverse osmosis water in the bottle. The water should have been boiled and cooled first to prevent bacteria growth. Place a small wad of paper towel in each nasal passage. Lay on the back and squirt or drip the mixture generously into each passage to soak the paper. Care must be taken to not sniff the paper farther into the nose or into the lungs. Leave the soaked paper towel in place for 5 minutes or more. Blow the nose to discharge the paper. The treatment should be done twice a day for 5 days. The sodium bicarbonate may sting slightly at the back of the nasal passage, but it should quickly go away. Reduce the concentration if the stinging is uncomfortable. This is a mild treatment, but it is very effective.

Start a vitamin, mineral and supplement program cautiously, and minimize all products which contain any form of carbohydrate such as sugar, yeast, rice flour, etc. The following is a list of recommended vitamin and mineral supplements and the function for each. Links to toxicity information are provided, but this program will not cause any vitamin or mineral toxicity problem. Vitamins, minerals and supplements should be taken to optimize one's health. Just meeting the minimum daily requirement is missing optimum health by a mile. Minimize supplement brands that contain sugars or starches. Keep a Log of Your Healing Progress. Get a note book and record exactly how you feel each day at the same time. List the food eaten each day. Generally, one dismisses their improvements when they occur slowly and discontinues a treatment when progress is being made. Bowel diseases heal very slowly.
Low-Blood Sugar Symptoms. Fiber. Do not take fiber supplements. Do not take psyllium seed husk which is very abrasive to the digestive system. Do not take fructooligosaccharides (FOS) fiber supplements because it consists of long chains of fructose units. Do not eat wheat bran or rice bran. Fiber is a bad dude. Dietary fiber may not be digestible by the healthy individual, but it certainly is digestible by pathogenic gut bacteria and yeasts. Fiber is the perfect time-release food for bad gut bugs and one of the worst things a person can eat for good health, contrary to professional medical advice. These bacteria and yeasts ferment the fiber to produce alcohol, acetaldehyde, lactic acid, acetic acid and a host of other toxic chemicals when they break down the fiber. Intestinal gas, flatulence, is a sure sign fiber and/or sugars are being fermented. The vegetarian concept of turning the gut into a fermentation tube is ridiculous. Avoid all whole grains, brown rice, fruit and dried beans as they are high in both fiber and complex carbohydrates, a double blow to the digestive system. The reason many gastroenterologist recommend a high fiber diet is based on the faulty logic of Dr. Dennis Burkitt, a British surgeon working in Africa more than half a century ago. Dr. Burkitt's theory that barley bread prevented irritable bowel disorders has failed. The Africans were simply showing the benefits of not eating fruit and refined carbohydrates like sugar and flour. Fiber not only does not prevent or cure irritable bowel diseases but actually makes them worse.
